Black Bean Quesadillas #MealtimeMonday
Happy #MealtimeMonday everyone! I hope you had a wonderful weekend. If you know me, you know that I could basically eat Tex-Mex for every meal. Unfortunately, there are those pesky little things called calories that prevent that from happening. Life is tough, right?! Anyways, I've come up with a healthier alternative to eating a cheesey chicken quesadilla. I will NOT claim that this tastes as good as the real thing because well... it doesn't. What it does do, is help to satisfy my cravings a little bit. Hopefully this can help you out too!
1 Whole Wheat Tortilla
A low sodium taco seasoning or any spice blend your prefer
**You can also add chicken if you are looking for a non-vegan recipe**
I didn't put amounts on this list because you can just customize the recipe to how you prefer it. The main idea is that we are replacing the cheese in a quesadilla with pureed black beans.
Start out by putting about 1/4 cup of rinsed black beans into a food processor or blender with a tiny amount of water. Blend until it's a smooth puree.
Next, start cooking your veggies down. Put onion, mushroom, bell peppers and corn into a pan with the taco seasoning to taste. Cook this until the onion becomes clearer in color. That is always a good indication that it is finished.
Lay out the tortilla and spread the black bean puree on the entire tortilla. Next, spread out your veggie mix onto one half of the tortilla. Fold in half and place in a pan. Cook this until it's golden brown and slightly crispy on both sides.
Finish off with a few slices of avocado on top or some homemade guacamole. This recipe has a good mix of protein, complex carbs and of course a bunch of veggies.
