#MealtimeMonday *Easy Vegan Lentil Soup*

      Happy Monday Y'all! Who else is feeling a little post-Superbowl sluggish today? Hopefully this can help!

      So... I'm becoming what I like to call a 90% of the time Vegan. I know it may sound silly but during the week when I'm cooking my meals at home, I feel SO much better eating all plant based foods. My body feels better, my mind feels clearer, I'm more energetic and my skin is improving a ton already. If you have known me for any length of time, you will know, I'm usually a meat and potatoes kinda gal so this is a far stretch. I like substantial meals. This is a SUPER easy recipe for lentil & veggie soup that is amazing to make on a Sunday and have for the rest of the week! It's also very filling and satisfying. I would really love to share more recipes with y'all to help keep your health and wellness goals on track. Normally, when making this, I'm not too specific about the amounts I use so feel free to switch it up to your liking!

Ingredient List

-3/4 cup of chopped onion

-2 cloves of garlic (minced)

-1/2 cup of diced carrot

-1/2 cup of diced celery

-3 cups of low sodium vegetable broth

-4 cups of water

-One cup of rinsed, uncooked lentils

-One cup of uncooked brown rice (if you want to skip the rice, white beans are a great substitute!) 

-1 cup of spinach

-1 can of diced tomatoes

Start by throwing the minced garlic, onion, celery and carrot in the bottom of the pot with a little olive oil. You will want to sauté this on medium heat until the onion becomes more clear in color.

Next, pour in your vegetable broth, water, diced tomatoes and literally EVERYTHING ELSE.

Season as you would like. I add a little salt, pepper, oregano, red pepper flake and cayenne because I like everything a little spicy! If you feel like its still missing flavor, a little secret that my husband told me is to throw in a little low sodium soy sauce or liquid aminos. It just gives it some oomph, ya know? That's it. Bring it to a simmer and put the lid on it. In about 35-40 minutes or whenever your lentils and rice are cooked...it's finished!
